Damien has been working in fine dining for 30 years, cooking in Michelin starred restaurants in Australia, Scotland, London and Ireland. In 2015 he opened Heron and Grey, gaining a Michelin star in 2017. Heron and Grey closed in 2019 and Damien reopened as Liath. Liath regained the Michelin star in just 6 months and is considered to be one of the most exciting restaurants in Ireland, serving excellent and original dishes.

Damien is passionate about seasonal food and creates his dishes around what is available at each particular time of the year. Having created almost 700 dishes since opening Heron and Grey, he has proven time and again that creativity and passion is crucial when innovating as a chef.
